Ingredients
1 small pumpkin, unpeeled, cut into 3cm (about an inch) wedges
1/4 teaspoon cracked black pepper
3 teaspoons fresh thyme leaves
1/4 teaspoon dried chilli flakes
1 tablespoon red palm or coconut oil
Directions
Preheat oven to 180°C/160°C fan-forced.
Place in a baking dish and drizzle with oil.
Sprinkle with pepper, thyme and chili; toss to coat.
Bake for 30 to 40 minutes or until tender and golden.
Cool completely before serving.
