Spicy Pumpkin Wedges

Birdie Pumpkin Wedges
Use any winter squash for this recipe; mix out the spices with ginger or cinnamon.

Ingredients

  • 1 small pumpkin, unpeeled, cut into 3cm (about an inch) wedges

  • 1/4 teaspoon cracked black pepper

  • 3 teaspoons fresh thyme leaves

  • 1/4 teaspoon dried chilli flakes

  • 1 tablespoon red palm or coconut oil

Directions

  1. Preheat oven to 180°C/160°C fan-forced.

  2. Place in a baking dish and drizzle with oil.

  3. Sprinkle with pepper, thyme and chili; toss to coat.

  4. Bake for 30 to 40 minutes or until tender and golden.

  5. Cool completely before serving.
