Banana Pancakes

Banana Pancakes

Ingredients

  • 1 very ripe Banana

  • 2 Tablespoons Chia or flax seeds (soaked in 6 Tablespoons of water for 15-20 minutes) or one whole egg

  • 1/2 cup of either Almond, Coconut, Pulverized Pellets

  • 1/4 tsp pure vanilla extract (optional)

  • 1/4 tsp cinnamon (optional)

  • 2 tablespoons Coconut Oil for frying​


Directions

  1. Mix banana and eggs together in a food processor until smooth.

  2. Add ground flax or chia seed, vanilla extract, cinnamon and flour, mix batter well.

  3. Heat coconut oil in a small skillet over medium-low heat.

  4. Scoop batter, using small scoop to make silver dollar-sized pancakes, onto the skillet and cook until the center starts to bubble, about 30 seconds.

  5. Flip pancakes and cook until bottoms are lightly browned, 1 to 2 minutes more.

  6. Cool completely and top with almond butter or fresh fruits.

  7. Feed in moderation and use as a special treat.
